Harvest Manual Harvest Vinification: Choice of the best grapes harvested slightly beyond normal ripeness, more markedly than Riesling. The selection takes place exclusively from old vines. Fermented in 50% new wooden barriques and tonneaux, they frequently undergo manual ?batonage? for 8 months, then the wine is assembled and aged in steel tanks on lees for another 10months, followed by 3 months of bottle refining.
