HARVEST:?Manual.
Being an old and very old vineyard, the usual conduction of the vine is what we call the glass.?For this reason, our harvests are made entirely by hand, without a machine, in order to ensure the highest quality of the grape. |

PREPARATION:? Cold maceration during 3-5 days. Whold bunch fermentation with 25% of stems in concrete tanks for 25 days with gentle sprinklings (light showering instead of the usual pumping-overs) and then another 14 days for the malolactic fermentation. Ageing of 14 months in French oak barrels. Drink over the next 10 years. |

TASTING NOTES:
Attractive cherry-red colour. Elegant wild fruit aromas together with undergrowth notes as well as subtle balsamic and mineral hints. Velvety and creamy, but surprisingly lively. Round and well balanced with an intense earthy and mineral character. Pleasant and fresh finish. |
