Winemaking
From the very old vineyards "Les Tosses" which grows around 80-100 years old vines. Carefully harvest by hand and the yield is very low at 500kg/ha, which is even way below the limite of the region which already famous for producing low yield and intense wines.
Macerated for 15-20 days, and then maturated 17 months in new French Oak Barrel. Rest in the winery for years before released to the market to ensure the best quality during drinking.
Tasting Notes
Opaque purple in color with ruby reflections. On the nose it is extremely complex. Black and red fruits such as blackberries and wild berries; very earthy coming from the "licorella" soils that is signature in the region, such as smoke, tar, leather and slate, some hints of balsamic aromas, mint mainly, are also present.
The wine is firmly structured on the palate, with incredible depth and a persistent mineral-driven finish, elegant at the same time. Perfect balance of the oak with spices and fruity jammy flavors. Smooth, expressive and lingering finish.
